Cooler fall weather brings a desire for warming spices like cinnamon, nutmeg and cardamom. It’s no wonder pumpkin spice lattes are in every coffee shop. But 47 grams of sugar per latte is a high price to pay for that sweet/spicy hit. How about a smoothie that delivers a wealth of minerals, fiber and cancer-fighting carotenes along with the spice?
Add to a blender and mix for one minute:
½ cup organic apple juice
¼ cup unsweetened organic apple sauce
1 cup carrots, chopped and steamed
¼ teaspoon ground cinnamon
¼ cup organic coconut or almond milk (cool or slightly warmed, to taste)
1/8 teaspoon cayenne pepper
Adjust thickness with more coconut or almond milk. Serve warm or over ice. Finish with a sprinkle of cinnamon.
